Step 2: Recipe

Cook Time: 15 minutes
Prep Time: 20 minutes
Servings: 4 burgers

Ingredients:

For the Patties:
  • 500g ground chicken
  • 4 strips bacon, cooked crispy and crumbled
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tablespoons breadcrumbs
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 tablespoon Worcestershire sauce
For Assembly:
  • 4 brioche burger buns
  • 4 slices cheddar or Swiss cheese
  • Fresh lettuce leaves
  • 1 large tomato, sliced
  • 1 ripe avocado, sliced
  • Pickles (optional)
Special Sauce:
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 clove garlic, minced
  • Fresh herbs (parsley or chives), chopped

Instructions:

  1. In a large bowl, combine ground chicken, crumbled bacon, diced onion, minced garlic, egg, breadcrumbs, smoked paprika, Worcestershire sauce, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat.
  2. Divide the mixture into 4 equal portions and shape into patties slightly larger than your buns, as they will shrink during cooking. Make a small indent in the center of each patty to prevent bulging.
  3. For the special sauce, whisk together mayonnaise, Dijon mustard, lemon juice, minced garlic, and fresh herbs in a small bowl. Set aside.
  4. Heat a grill pan or skillet over medium-high heat. Cook the patties for 5-6 minutes per side, or until the internal temperature reaches 74°C (165°F). During the last minute of cooking, place a slice of cheese on each patty and cover to melt.
  5. While the patties cook, toast the brioche buns cut-side down in a dry pan or under the broiler until golden brown.
  6. Spread the special sauce on both halves of each bun. Layer the bottom bun with lettuce, followed by the chicken-bacon patty with melted cheese, tomato slices, avocado, and pickles if desired. Top with the other half of the bun.
  7. Serve immediately while hot, accompanied by your favorite sides such as sweet potato fries or a fresh salad.
