Angus Burger

Ingredients:
- 1.5 lbs (680g) ground Angus beef (80/20 fat ratio)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 4 brioche burger buns
- 4 slices aged cheddar cheese
- 4 leaves butter lettuce
- 1 large tomato, sliced
- 8 pickle slices
- ¼ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tsp Worcestershire sauce
- 1 tbsp butter (for toasting buns)
Instructions:
- In a small bowl, mix mayonnaise, ketchup, mustard, and Worcestershire sauce to make the special sauce. Set aside.
- Divide the ground Angus beef into 4 equal portions (about 6 oz each). Gently form into patties slightly larger than your buns, making a small indentation in the center of each patty with your thumb to prevent bulging during cooking. Season both sides generously with salt, pepper, and garlic powder.
- Heat a cast-iron skillet or grill to medium-high heat. Cook patties for 4-5 minutes on the first side without pressing down. Flip and cook for another 3-4 minutes for medium doneness (internal temperature of 160°F/71°C).
- During the last minute of cooking, place a slice of cheddar cheese on each patty and cover briefly to melt.
- While burgers cook, split the brioche buns and spread butter on the cut sides. Toast them on the grill or in a separate pan until golden brown.
