Angus Burger

  • Servings: 4 burgers
Ingredients:
  • 1.5 lbs (680g) ground Angus beef (80/20 fat ratio)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 4 brioche burger buns
  • 4 slices aged cheddar cheese
  • 4 leaves butter lettuce
  • 1 large tomato, sliced
  • 8 pickle slices
  • ¼ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp Worcestershire sauce
  • 1 tbsp butter (for toasting buns)
Instructions:
  1. In a small bowl, mix mayonnaise, ketchup, mustard, and Worcestershire sauce to make the special sauce. Set aside.
  2. Divide the ground Angus beef into 4 equal portions (about 6 oz each). Gently form into patties slightly larger than your buns, making a small indentation in the center of each patty with your thumb to prevent bulging during cooking. Season both sides generously with salt, pepper, and garlic powder.
  3. Heat a cast-iron skillet or grill to medium-high heat. Cook patties for 4-5 minutes on the first side without pressing down. Flip and cook for another 3-4 minutes for medium doneness (internal temperature of 160°F/71°C).
  4. During the last minute of cooking, place a slice of cheddar cheese on each patty and cover briefly to melt.
  5. While burgers cook, split the brioche buns and spread butter on the cut sides. Toast them on the grill or in a separate pan until golden brown.
  6. Spread special sauce on both halves of each toasted bun. Place lettuce on the bottom bun, followed by the cheese-topped burger patty, tomato slices, and pickles. Top with the upper bun.
  7. Serve immediately while hot and enjoy!
