Ingredients

  • 2 lbs ground beef (80/20 blend), divided into 8 equal portions
  • 8 slices American cheese
  • 4 slices sharp cheddar cheese
  • 4 brioche burger buns
  • 4 leaves iceberg or butter lettuce
  • 1 large tomato, sliced
  • ½ cup dill pickle chips
  • ¼ cup finely diced white onion
  • Salt and freshly cracked black pepper, to taste
  • 2 tbsp unsalted butter, softened
  • For the Sauce: ½ cup mayonnaise, 2 tbsp ketchup, 1 tsp yellow mustard, 1 tsp sweet relish, ½ tsp smoked paprika

Instructions

  1. Prepare the Sauce & Toppings: In a small bowl, whisk together the mayonnaise, ketchup, mustard, relish, and smoked paprika. Cover and refrigerate until ready to use. Wash and slice the lettuce, tomato, and onion; set aside.
  2. Toast the Buns: Spread softened butter evenly on the cut sides of each brioche bun. Place them cut-side down on a hot griddle or skillet over medium heat. Toast for 1–2 minutes until golden brown and crispy. Remove and set aside.
  3. Form the Patties: Gently form the 8 portions of ground beef into thin, round patties slightly wider than your buns (they will shrink). Season both sides generously with salt and pepper just before cooking. Do not overwork the meat.
  4. Sear the First Side: Heat a cast-iron skillet or griddle over high heat until smoking hot. Add 4 patties at a time (do not crowd). Press down firmly once with a spatula to ensure even contact. Sear undisturbed for 2–3 minutes until a deep brown crust forms.
  5. Flip & Stack: Flip each patty. Immediately place one slice of American cheese on each patty. Allow it to melt for about 1 minute. Using a spatula, carefully stack one cheesy patty directly on top of another cheesy patty to create a double-thick unit. Add a slice of sharp cheddar on top of each stacked pair and let it melt for 30 seconds. Repeat with remaining patties.
  6. Assemble: Spread a generous layer of sauce on both the bottom and top toasted buns. On the bottom bun, layer lettuce, tomato, pickles, and onion. Place the hot double-stacked patty unit on top. Cap with the top bun. Serve immediately while the cheese is still molten and the bun is warm.
