Ingredients

For the burgers:

  • 1 lb (450 g) ground beef (80/20)
  • Salt and black pepper, to taste
  • 4 slices cheddar cheese
  • 8 slices bacon
  • 2 brioche burger buns
  • 2 lettuce leaves
  • 2 tomato slices
  • 4 pickle slices
  • 4 onion rings

For the burger sauce:

  • 3 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tsp yellow mustard
  • 1 tsp pickle relish
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate.
  2. Divide the ground beef into four equal portions and shape into thin patties. Season both sides generously with salt and pepper.
  3. Heat a cast-iron skillet or grill over high heat. Cook the patties for about 3–4 minutes per side.
  4. Place one slice of cheddar cheese on each patty during the final minute of cooking and allow it to melt.
  5. Mix all burger sauce ingredients in a small bowl until smooth.
  6. Lightly toast the brioche buns until golden.
  7. Spread burger sauce on both halves of each bun.
  8. Assemble each burger by adding lettuce, one cheeseburger patty, two slices of bacon, the second cheeseburger patty, two more slices of bacon, tomato, onion, pickles, and finally the top bun.
  9. Serve immediately with fries, onion rings, or coleslaw.
