Ingredients:
For the Ribs:
  • 2 lbs beef short ribs
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste
For Assembly:
  • 4 brioche or potato buns
  • 8 oz cheddar cheese, sliced
  • 1 cup BBQ sauce
  • 1 large tomato, sliced
  • 2 cups shredded lettuce
  • 1 cup crispy fried onions
  • ½ cup chimichurri mayo (mix mayo with 2 tbsp chimichurri sauce)
Instructions:
  1. Preheat oven to 325°F (165°C). Season ribs with salt, pepper, paprika, and cumin.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear ribs on all sides until browned, about 8 minutes. Remove and set aside.
  3. In the same pot, sauté onion and garlic until softened, about 5 minutes. Add beef broth, red wine, and bay leaves. Return ribs to pot.
  4. Cover and transfer to oven. Braise for 3 hours until meat is fork-tender and falling off the bone.
  5. Remove ribs from liquid and shred the meat using two forks. Discard bones and excess fat. Mix shredded meat with some of the braising liquid to keep moist.
  6. Toast buns lightly. Spread chimichurri mayo on both halves.
  7. Layer bottom bun with lettuce, generous portion of shredded rib meat, BBQ sauce, tomato slices, cheddar cheese, and crispy onions. Top with bun lid.
  8. Serve immediately while warm. Enjoy!
