Ingredients

  • 1 teaspoon black pepper
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 3 tablespoons olive oil
  • 1 tablespoon white vinegar
For the Burgers:
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 4 brioche burger buns
  • 4 leaves fresh arugula
  • 1 ripe avocado, sliced
  • 8 slices cooked bacon (optional)
  • Salt and pepper to taste
For the Lime Aioli:
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh cilantro, chopped
  • Salt to taste

Instructions

Step 1: Marinate the Pork Combine the minced garlic, cumin, oregano, salt, pepper, orange juice, lime juice, olive oil, and white vinegar in a large bowl. Add the pork shoulder chunks and toss until evenly coated. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat deeply.
Step 2: Cook the Pernil Preheat your oven to 325°F (165°C). Transfer the marinated pork to a roasting pan, covering it tightly with aluminum foil. Roast for 2.5 to 3 hours, or until the meat is fork-tender and easily shreds. Remove from the oven and let it cool slightly. Using two forks, shred the pork into fine pieces, discarding any excess fat. Reserve about 1/4 cup of the cooking juices to keep the meat moist.
Step 3: Prepare the Caramelized Onions While the pork cools, melt the butter in a skillet over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally, for 15-20 minutes until they turn golden brown and sweet. Set aside.
Step 4: Make the Lime Aioli In a small bowl, whisk together the mayonnaise, lime juice, minced garlic, chopped cilantro, and a pinch of salt. Adjust seasoning to taste and refrigerate until ready to use.
Step 5: Form the Burger Patties Take approximately 1/2 cup of the shredded pernil and mix it with 1 tablespoon of the reserved cooking juices. Form into compact patties about 3/4-inch thick. The mixture should hold together due to the natural gelatin in the slow-cooked pork. If needed, add a beaten egg white as a binder. Season lightly with salt and pepper.
Step 6: Cook the Patties Heat a cast-iron skillet or grill pan over medium-high heat. Cook the pernil patties for 3-4 minutes on each side until they develop a nice crust and are heated through. Avoid pressing down on the patties to maintain their juiciness.
Step 7: Toast the Buns Lightly butter the cut sides of the brioche buns and toast them in the same skillet for 1-2 minutes until golden.
Step 8: Assemble the Burgers Spread a generous layer of lime aioli on both the top and bottom buns. Place a pernil patty on the bottom bun, followed by caramelized onions, arugula leaves, avocado slices, and bacon if using. Top with the upper bun and serve immediately.
