Ingredients
For the Burger Patties
- 2 lb (900 g) picanha beef, ground
- 1 tsp salt
- 1/2 tsp black pepper
For Assembly
- 4 brioche burger buns
- 4 slices cheddar cheese
- 4 lettuce leaves
- 4 tomato slices
- 1 small red onion, sliced
- 2 tbsp mayonnaise
- 1 tbsp butter (for toasting buns)
Instructions

Prepare the Meat
- Grind the picanha or ask your butcher to grind it fresh.
- Divide the meat into 4 equal portions and shape into burger patties.
- Season both sides with salt and black pepper.

- Spread butter on the cut sides of the brioche buns.
- Toast them in a skillet or on the grill until golden brown.

- Heat a grill or cast-iron skillet over high heat.
- Cook the patties for 4–5 minutes per side for medium doneness.
- During the last minute of cooking, place a slice of cheddar cheese on each patty and allow it to melt.
