Ingredients

  • 1 kg beef ribs, cleaned
  • 300 g ground beef (lean cut such as top round or sirloin)
  • 14 g salt
  • Black pepper to taste
  • Cumin to taste

Instructions

  1. Cut the beef ribs into small pieces. Remove the white membrane and part of the fat, but keep about one-third of the fat to maintain flavor and juiciness.
  2. Grind the rib meat in a food processor or ask your butcher to grind it for you.
  3. In a large bowl, combine the ground rib meat with the lean ground beef.
  4. Add salt, black pepper, and cumin. Mix everything thoroughly until well combined.
  5. Shape the mixture into burger patties using your hands, a burger press, or even a greased lid or mold.
  6. Heat a grill, skillet, or barbecue over medium-high heat.
  7. Cook the burgers for about 4–5 minutes per side, or until they reach your preferred doneness.
  8. Serve on toasted burger buns with your favorite toppings such as cheese, lettuce, tomato, onions, or barbecue sauce.
