Ingredients
- 2 cups dried chickpeas, soaked overnight
- 3 garlic cloves
- 1 small onion, chopped
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons chopped parsley or cilantro
- 2 tablespoons olive oil
- 3 to 4 tablespoons oat flour or all-purpose flour
- Oil for cooking

Instructions
- Drain the soaked chickpeas and pat them dry with a paper towel.
- Add the chickpeas, garlic, onion, coriander, paprika, parsley, salt, and black pepper to a food processor. Pulse until the mixture becomes textured but holds together. Do not overprocess into a paste.
- Transfer the mixture to a bowl and stir in the olive oil and flour. Mix until the dough is firm enough to shape into patties.
- Divide the mixture into 4 equal portions and shape them into burger patties.
- Heat a lightly oiled skillet over medium heat. Cook the burgers for about 4 to 5 minutes on each side, or until golden brown and crispy.
- Assemble the burgers with buns, lettuce, tomato, cheese, and your favorite sauce.
- Serve immediately while warm.
