Cook Time: 20 minutes
Prep Time: 15 minutes (+ 12 hours soaking time)
Servings: 4 burgers

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 3 garlic cloves
  • 1 small onion, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped parsley or cilantro
  • 2 tablespoons olive oil
  • 3 to 4 tablespoons oat flour or all-purpose flour
  • Oil for cooking

Optional Toppings

  • Lettuce leaves
  • Tomato slices
  • Burger buns
  • Cheese or vegan cheese
  • Mayonnaise or sauce of choice

Instructions

  1. Drain the soaked chickpeas and pat them dry with a paper towel.
  2. Add the chickpeas, garlic, onion, coriander, paprika, parsley, salt, and black pepper to a food processor. Pulse until the mixture becomes textured but holds together. Do not overprocess into a paste.
  3. Transfer the mixture to a bowl and stir in the olive oil and flour. Mix until the dough is firm enough to shape into patties.
  4. Divide the mixture into 4 equal portions and shape them into burger patties.
  5. Heat a lightly oiled skillet over medium heat. Cook the burgers for about 4 to 5 minutes on each side, or until golden brown and crispy.
  6. Assemble the burgers with buns, lettuce, tomato, cheese, and your favorite sauce.
  7. Serve immediately while warm.

This recipe is inspired by traditional Brazilian chickpea burger preparations.
