Ingredients:
- 1.2 kg pork shoulder (pernil)
- 4 burger buns
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 onion, sliced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 cup barbecue sauce (optional)
- Pickles, lettuce, and tomato slices
- Cheese slices (optional, cheddar or mozzarella)
Instructions:
- Prepare the pork: Season the pork shoulder with salt, pepper, paprika, and cumin.
- Sear the meat: Heat olive oil in a pan and sear the pork on all sides until browned.
- Slow cook: Transfer to a slow cooker or covered pot with garlic, onion, and a small amount of water. Cook on low heat for about 3 hours until tender and easy to shred.
- Shred and mix: Pull the pork apart using two forks and mix with its cooking juices and barbecue sauce if desired.
- Assemble burgers: Toast the buns lightly, then add a generous portion of pulled pork.
- Add toppings: Finish with cheese, lettuce, tomato, and pickles.
- Serve hot and enjoy immediately.
